• With spring comes maple sap gathering!

Starting at the full moon of March, many nations get ready to gather maple sap. Even if it is now known for its many by-products, sap has been recognized by First Nations for millennia for its medicinal and curative virtues. It was long gathered in bark, wood or terracotta receptacles and then evaporated.

One of the studies carried out on this subject[1] shows that maple syrup, like blueberries and other berries, is a probiotic and fosters the growth of good bacteria in the intestine. Moreover, it contains a long list of beneficial compounds (polyphenols,[2] vitamins, amino acids, minerals, etc.) with many health-enhancing properties, including anti-oxidation and the inhibition of cancer-cell proliferation.
